This week I was feeling rather uninspired, but still wanted to make something tasty and, most of all, easy. So i whipped up these banana peanut rings – literally take 20 minutes to make, and you should have pretty much everything lying around your kitchen.
One problem we tend to have, is we like to have bananas in the house – they’re cheap, filling, and a quick snack when you need to get back to work. But almost always, one or two bananas end up not being eaten. When we realise it, they’re far too ripe to eat, but still not bad enough to go to the chickens. So this is a good solution!
One thing you might not have is the doughnut moulds. You can either get some on Amazon, or just use a regular muffin tin. It won’t be a banana peanut ring, but it’s still a banana peanut something…
- 2 ripe bananas
- 2 eggs
- 1 cup peanut butter – I used the crunchy kind
- 2 tsp vanilla extract
- 3 tbsp honey
- 1/2 tsp baking powder
- chocolate chips – measure with your heart. I use 100 g for this recipe.
- Preheat your oven at 200º C and prepare the moulds / tins.
- Mash the bananas, either with a fork or a potato masher.
- Add all the other ingredients, by the order listed, always mixing after adding each ingredient.
- Distribute the mixture in your moulds or tins.
- Bake at 200º C for 9 minutes.
I usually bake my rings for 9 minutes, then open the oven door, let that blast of hot air out, and then keep them in the oven, turned off, for approximately 10 minutes. Doing this ensures the rings get nice and brown on top, but doesn’t cook them, so they won’t get crumbly and dry.
