(Really) Slow Cooked Pork

Hello again!

This week in “Using meat I have in the freezer and is about to go bad”, we had a huge piece of pork loin. Loin can be a bit tricky to cook, because it can come out very tough and dry, very easily.

We took a piece and cut it into very thin steaks, and fried them. I’ll post those another time, but for now, I’d like to focus on the slow cooked bit. And. It. Was. Incredible.

So this is not exactly a recipe. I’ll just tell you what I used and the cooking process. It’s more of a guide, if you will.

I put some olive oil on the bottom of the slow cooker, then I cut one big onion in rough slices and put them in the slow cooker. I put the pork loin in and seasoned with:

  • salt
  • pepper
  • garlic granules
  • smoked paprika
  • chilli puree
  • tomato paste
  • butter
  • white wine
  • more olive oil

And that’s it!

I turned the slow cooker on around 10pm, on the slow setting, and let it untouched up until 8am. Then, I turned it to the high setting, made some cuts on the loin to make sure it cooked through, and let it sit again. Around 12pm, I turned the slow cooker off, and that was it – so in the end, it took me around 15 minutes of prep for a 14-hour cooking time! I chose some marvellous mashed potatoes to go with it, and we’re going to eat the remaining for dinner with some ciabattas.

And that’s it from me this week! I really like to slow cook meat, it’s just so effortless and it always comes out amazing! Just be sure to be generous with the seasonings…
